Esistono tipi diversi di farine, che si differenziano fra loro per l&#8217;apporto glutinico (cio\u00e8 la quantit\u00e0 di glutine). Ogni farina quindi andr\u00e0 bene per diversi tipi di maturazione, e assolutamente non per altri.
